Unix permisions are not usable for nextcloud.....

With nextcloud the webserver/php-fpm server needs to be able to manage ALL files. So it needs access.

Sharing the folder from nextcloud is a nextcloud construct. (ALL file access goes through the server, there is no need to store the data below the document folder of the webserver).

AFAICT nextcloud has no options to hide directories, you can allow access by sharing a folder. (it will become visible in their home folder).

Also you cannot block access to subdirectories.  Anything that should not be shared should be above the level you share.
