my exchange server 2016 restarts each night.

Is the server all up to date?
Before you find out the cause of the issue, a temp workaround might be to override the global monitor which is probably causing reboots.

solved by changing CPUs and COREs :-)

I am just curious. What exactly did you change? Did you add CPUs and cores? Something else?

I have changed to
8 Sockets
4 Cores per Socket

I would check Windows Update settings first.
Settings -> Update and Security -> Windows Update -> Change active hours and Restart options
Then Local/Domain GPO -> Computer Configuration -> Administrative Templates -> Windows Components -> Windows Update -> Configure Automatic Updates -> check your settings
