I'm not a mac user, but it sounds like possible malware or virus activity

When opening a NEW email click on the FROM field above and the user will clearly see all the ACCOUNTS setup on their device .. this one with the 'pliancyAmber...' will be visible.

Open the Settings app and go to 'Passwords and Accounts' and the offending account will be visible there and can be deleted.

You may also want to open the Mail section in settings and look at the bottom of the screen where the Default Account controls what email address is used for NEW emails.

In terms of HOW this happened .. a virus or malware is unlikely but possible.

On iOS the method to add new accounts is largely manual so in order to work out HOW it happened we would need to know
1. What version of iOS is this user running.
2. Is the dodgy email setup on an existing valid email account (it is possible to have multiple emails in the one POP/IMAP account on iOS) or is it a completely separate account on the device.
3. When did this start to happen .. if it only occurred a few days ago does the user recollect installing or updating an APP
