Signatures have always been problematic in Outlook, but before I can give you a solution, can you please advise which Email Client Software you are using?<br />

Also, if you can post exactly how you would like your signature to look, I may be able to just give you the code you need to use.<br />

just be aware, that content can change during e-mail transmission. There are a lot of settings on the source and target servers, what is allowed, what not and how they interpret the content (plain text vs. html, character sets, language etc.). <br />
<br />
But your description would point me to a common mistake usually done by a lot of users. They just copy and paste content from one corner into the other. Everything you copy can contain invisible formatting tags, meta data or whatever. Especially if you copy it from sources, which allow enhanced formatting (i.e. HTML or Word etc.). And this maybe what struggles the content dependent from the source and the target system. The best idea is first to make sure, that your text is free of invisible content. So copy the signature into a text editor, from there copy it again back into the signature. After that you may start to add formatting as needed and provided by your email client.
