"Y" earpod cable for iPhone 6S - Use for attaching to a digital recorder

I'm on phone calls using my iPhone 6S and would like to record some of them. What kind of "Y" cable do I need so that I can keep the earpods in my ear and also run the other cable to a digital recorder?

As I recall the 6S still has a "round" jack for the headphones to plug into, so you should be able to just use a basic audio splitter.  Assuming Apple doesn't prevent that for some reason, but wouldn't think that would be the case.  Something like this would be worth a try:

That being said it will only give you one side of the call, not your voice.  When you talk your voice doesn't play through your headphones.  If you want both sides of the conversation then I think there are some more expensive recording devices that can help with that, but didn't sound like that was what you wanted.

Another option is just to take the call on speaker mode on your call, and then have the recorder nearby so it can pick up the phone speaker and your voice via it's internal microphone.  That would give you both sides of the conversation, but could include some background noise, etc.
