After 180 days, your machines will no longer be activated - that does not mean that they stop working. Your students will see a wartermark on their desktop, that's all I guess.

Our high school is shut down because of the pandemic and students are engaged in distance learning. approximately 500 laptops running Windows 10. Our license is a volume license and I have a KMS server installed at the school. Without access to the domain and KMS server will those laptops eventually stop working? THANKS!

Windows 10 is a personal computer operating system featuring the "universal application architecture" (UAP); apps can be designed to run across multiple devices with nearly identical code, including PCs, tablets, smartphones, embedded systems, Xbox One, Surface Hub and HoloLens.
