To be clear:
The assumption "if their computer is infected the infection may notice that Quick Assist is in use, and then propagate into your system" is Dr. Klahn's, not Microsoft speaking.
"Propagation" via remote tools like QuickAssist is hardly even possible since no common malware is made exactly for that. You would need tailored malware, like secret services use, that know exactly that an asset is using quickassist regularly.
You will not be endangered.
