How fast does DNS Server record propagate to clients systems?

Hello - I am in the process of doing a cut-over of some IIS sites I migrated to another web server (internally). I have tested all sites on my desktops by modifying my DNS host file, however once I cut-over I'll need to modify my DNS server CNAME record for these sites. If I made the change during business hours, how fast will it update to my users? Will they see any affect?
