Using GPO to lockdown Standalone windows 10 Laptops

We have some stand alone laptops that we want to "lockdown" via local GPO policy. Win 10 Pro.  We want to limit the users to only being able to use 2 programs, a chrome browser and  Slashtop remote access software. Can I create a local policy that will effect on a certain user account on the Laptop and say not the admin account? Any pitfalls here I may be missing? Thank you in advance
