Extracting a list of organizers from Skype enabled meetings with Exchange O365

Trying to get an export of all meetings created and who the organiser is in Exchange O365 that are Skype enabled.  
Background for the request, we would like find all the users in the environment that create meetings (skype).  As we are transistioning to Teams, we want to understand how many Audio Conference licenses we need.  
This way if for the next 6-12 months we can understand who needs it instead of allocating a license to all users.
Hopefully there is a way to do this via Powershell.
Current environment:
  Polycom Clariti (used for the local SIP dialin for VC)
  Skype for Business - On Premise
  Exchange Online O365

Thanks for this, it did make me think outside the box.  I have used the Security/Compliance centre to export a report of all meetings sent with specified keywords.  Then reduce the spreadsheet to the unique creators of those meetings.
