Could you point how to configure Windows 10 to open another Word version instead of the current defined?

Hi
By reading reading your reply I guess my problem is the 02 Word versions coexistence.
The word 2007 is official and installed, Word 2020 is just a trial version, installed also but not operational.
So maybe the better approach here is uninstall Word2020, isn't it?

Definitely. You might have to repair your 2007 installation after, to restore all references in the registry.

Windows 10 is very poor at remembering which application you pointed to for use with a double-click. I develop for Word and have several versions installed on every computer. I use the SendTo menu (Users/YourActualUserName/AppData/Roaming/Microsoft/Windows/SendTo) and put shortcuts to each edition there. Then I have a right-click choice to send any file to any version.

What you pointed makes all sense with the issue I had.

Installing different Office versions is possible, but not supported by MS, thus not recommended.
When you need to work with different Office versions in a reliable manner, then you need virtual machines for the different versions.
So, please rephrase your question. What is your actual problem, what is the context?
