How do I add a JSON node via PowerShell

This is a follow-up to the following question regarding deleting a JSON node via PowerShell.
I have the following JSON entity:
$protocolHandler =
@"
{
    "allowed_origin_protocol_pairs": {
        "https://firstdomain.zoom.us" : { "zoommtg":true }
    }
}
"@
I want to add a second protocol pair:
$protocolPair = @"
    {
          "https://seconddomain.zoom.us" : { "zoommtg":true }
    }
"@
... so that the resulting entity looks like this:
$protocolHandler =
@"
{
    "allowed_origin_protocol_pairs": {
        "https://firstdomain.zoom.us" : { "zoommtg":true },
        "https://seconddomain.zoom.us" : { "zoommtg":true }
    }
}
"@
I tried the following:
$protocolHandler =
    ((@($protocolHandler | ConvertFrom-Json)) + ($protocolPair | ConvertFrom-Json)) |
        ConvertTo-Json
... but then I ended up with:
[
    {
        "allowed_origin_protocol_pairs":  {
                "https://firstdomain.zoom.us":  "@{zoommtg=True}"
            }
    },
    {
        "https://seconddomain.zoom.us":  {
                "zoommtg":  true
            }
    }
]
So then I tried:
($protocolHandler | ConvertFrom-Json).allowed_origin_protocol_pairs =
    @(($protocolHandler | ConvertFrom-Json).allowed_origin_protocol_pairs) +
    @($protocolPair | ConvertFrom-Json)
... but that seemed to ignore the second pair and gave me:
PS C:\Users\Sam> $protocolHandler
{
    "allowed_origin_protocol_pairs": {
        "https://firstdomain.zoom.us" : { "zoommtg":true }
    }
}
What am I doing wrong? Thanks!
