service components diagrams and risks or lack thereof

I'm trying to build a case that all production applications should have detailed documentation including all server side components, e.g. on-prem ERP should have clear documentation on what provides the back office aspects of the system. All are VM's on ESXi hosts. I am trying to draw out particular risks in not having such documentation available, in your role as supporting servers/storage, can you provide any useful examples of issues that could arise if there is not clear oversight on all the relevant server side components of a specific service such as ERP, Email, AD etc. Anything to add to the case for such documentation to be put together would be most useful.

Secondly, what do you refer to such documentation as for all your major services, does it have a particular name in your organization(s)?
