Cannot import Ubuntu VM into Hyper V of a Windows Server 2016 Standard.
Trying to import a Linux Ubuntu desktop OS Hyper V machine into a Microsoft Server 2016 Standard server's Hyper V, and when I select the folder where the VM is when I move forward to try to import it - it does not see it.
What might be the issue?

Is it a .vhdx file? If not and it's for instance a .vmdk file, you need to convert it.

While creating a new VM, did you select the correct generation?
https://docs.microsoft.com/en-us/windows-server/virtualization/hyper-v/plan/should-i-create-a-generation-1-or-2-virtual-machine-in-hyper-v
Operating system versions | Generation 1 | Generation 2 |
---|---|---|
Ubuntu 14.04 and later versions | ✔ | ✔ |
Ubuntu 12.04 | ✔ | ✖ |
Did you EXPORT the VM from the original host? Or did you just copy a folder? Exporting gets all the configuration files; VHDX/AVHDX files are important - they're the data, but the configuration files are just as important, especially when you have AVHDX (snapshots).
