How to Extract All Documents Created / Modified in the Last 5 Years Into One Folder AND Manage Duplicate Filenames While Excluding One File

Hi,

How could I copy all files from directories and subdirectories in a Windows My Documents location made or edited in the last 5 years BUT...exclude the process from a SINGLE directory, while STILL managing to preserve files that may have duplicate filenames?

So that, I could run the process and the result would be a single directory with every file there and, were there are duplicates, it would just have some sort of ordinal, like

notes.txt (1)
notes.txt (2)
notes.txt (3)

And, which would at the same time skip one extraneous, but highly structured, directory from the process.

My goal here is to leave about 14 years of My Documents' files on an external HDD and have all the "active" ones back in a single directory on my newly installed Win10 laptop.

One caveat - the My Documents in Question is itself on the external hard drive.  I can move it over to any location to make the process more feasible.
