MySQL 5.7 - AWS -   InnoDB - Run a huge process - without impacting too much the server: HOW?

Hello,
I have quite a huge process (stored proc) that needs a lot of updates on a table. It could run for more that 1 hour.  I do not want to impact too much the overall performance (it's prod and I have no way to run this outside prod).
I have seen the [low_priority] on insert and update. Unfortunately this is not compatible with InnoDB.

What are the other solutions? Does MySQL 8.0 have such implementation ?
