Changing Settings on New iPhone

I just traded in my old iPhone 6 for a new iPhone 12, and there are some annoying "features" that I would like to change.  

1. One is the need to pick up the phone to "wake" it up.  I have several apps that I run while the phone is on the counter (radio shows, podcasts, timers, audible books, etc.), and it's annoying (especially when my hands are wet or dirty) to have to pick up the phone to see the screen.  

2.  When the phone rings there are tiny "answer" or "decline" icons at the top of the screen.  Is there any way to go back to when there was were large buttons filling the screen?
