Will local Outlook emails on my local computer after I leave company/lose connection with source Exchange server?

There is a personal computer which has an Outlook instance that stores work emails.  The user is leaving the company.

Will the work emails remain in the Outlook instance on the personal computer?

Currently when responding to a work email, the user has a choice of either responding as the work email user or using a personal Gmail address.   Will the user still have the option of responding from the Gmail account to work emails?

That depends on how you configured. And if the user export a copy before he leaves he holds a copy.

If you have enabled wiping his mobile as well.

if I understand your query, User will not be able to do anything once you change his password or disable the mailbox.

Best practice would be to remove all of the work emails from the personal computer.  If the emails are stored in a .PST or .OST file on the computer, then they would have access to that content after having left the company.  Even if their company account is wiped, they could potentially respond to the emails indirectly using their gmail account because they would have access to the content. Certainly they could open them and obtain possibly proprietary information about the company from them.  Even if you feel the employee is completely responsible and trustworthy, it protects them, you and the company from any potential (even if inadvertent) misconduct.

PST files remain accessible and can be open by any outlook.exe
OST files can only be open easily if the user keeps the corresponding outlook profile on the computer. Even if the user has been deleted in the messaging system.
If the Outlook profile is removed, the user will have to use/buy a tool to export the content from an OST file.
Note that new versions of Outlook (2013/2016) are configured by default to keep only the last 6 months of message.

So, users that will leave company will probably copy data to PST files before.

By default - Yes, they will.

Will the user still have the option of responding from the Gmail account to work emails?
Sort of. When the user leaves the company, their account should be disabled and the email account should be set to no longer send/receive.
