using windows server backup and veeam
I use veeam to backup our virtual machines. Is there any use in setting up a backup with the default windows server backup program? Could I use it to recover from a crash?

Veeam is a far superior backup product to the built-in Windows Server Backup.
Since it's already in play, that's all that needs to be done to back things up and recover in the event of a disaster.
I suggest setting up a Scale-Out Backup Repository (SOBR) and link that to BackBlaze B2 for an off-site cloud tier that allows for immutability. We set immutability to 30 days. B2 is the least expensive option out there and the company has a solid business model as they've been around for a long time now.
