I would suggest ESXi, and install in a virtual machine, but the G5 is an old server, and not sure you'll find a modern ESXi which supports it today, because processors are old in a G5.

Hi Andrew, actually I could use Windows Server 2012 R2 or Windows Server 2016, since my current domain/forest level is Windows Server 2012 R2. I chose Windows 2019 simply because is the newest.<br>In your opinon, there might be chances that HP embedded SATA controller of my HP Proliant could be recognized by previous Windows OS releases?

You could always disable the onboard SATA controller and add a PCIe one that your OS supports. Likely to have to buy cables as well though as P800 is the latest that's officially supported in that model.

I used Rufus to make a bootable USB stick with Windows Server 2019 ISO.
Installation starts fine but at partition phase it doesn't recognize any drive.
I configured RAID1 with HP embedded SATA raid controller.

Servers are computing devices that are similar to desktop computers in that they have the same basic components, but are significantly different in size, configuration and purpose.
