Monitor On-Prem Exchange MB traffic

What is the best way to monitor traffic that is going thru Exchange Servers?
I want to identify all mailboxes, distribution lists, shared resources, calendars etc that are being used.

1) Will last logon time identify delegated MBs?

2) Also, aren't DLs already migrated when in hybrid?
1) yes - assuming the mailbox is logged on to - and not used only with autoaccept agents or the like

2) so its changed from on prem to hybrid in the time since you asked the question ? In that instance, yes... but i don't see how that relates to the original question

Is there a process to migrate DLs?
