ADFS to Azure AD apps migration support needed

I have recently been pulled into assisting on a project that involves migrating on prem apps with ADFS into Azure AD.   I have not worked a lot with this and am hoping someone here has some experience and can help provide some guidance and assistance

We have an on prem ADFS farm that is connecting to our Azure AD cloud environment via Azure AD connect.  there are about 60 apps and there are some that are ready to migrate and others that will need a bit of work (SAML, SSO, authentication tokens, metadata, etc..).  Most are Saas Apps but I am seeking some help with someone that has completed a migration with apps from ADFS to Azure AD. The goal is to eventually turn down the ADFS farm and completely have all cloud apps authentication in the Azure AD tenant.
