Data migration -How to handle when moving to a new ecomm platform

The ecomm platform at my current job is done in Java about 10 yrs ago. The company has decided to replace it.


We've been looking at Magento and open source ecomm platforms. I and another developer prefer .Net platforms.


Now, what about the inventory? I'm new at this job and they say it's complicated. Suppose we go to Magento. What do we need to keep in mind? how does inventory ported to a new ecomm platform? what is the checklist of issues we need to keep in mind?

Also when choosing a system you need to make a complete list of requirements and check if they are available in the application and or plugin & extension
- Payment gateway
- Shipping
- Multilanguage
- Coupon
- Attribute type
- Physical and digital product
- Quote if you sell service
- Security, updates, flexibility
ect...

Do you mean from scratch? if so, why when there are existing platforms out there?

Yes, this helps a lot. I don't think Woo is a good option. All the data goes into one table, I've read. We do need multi language eventually. 
Yes you are right Woo DB is a mess,  but this is working ok for now ...
Yes I would check Magento first and check if it meet's your needs you can install it locally using wampserver.
You can test them all before choosing this is the best way to decide...
