Exchange server 2019 Standard VS Enterprise

What version do I have to go with? Standard or Enterprise?

standard is more than sufficient.  you can put in 1 database or split into a couple if you want to organize a certain way (by dept. or something) though putting all in 1 is not an issue

you will also need standard CALs though if you plan to use archive mailboxes, will need enterprise CALs for any of the users that will have an archive

I read that Standard  can host up to 5 mailbox databases while Enterprise can host up to 50 mailbox databases ( I am not sure 50 or 100 databases )

Then start with standard. If you can manage with 5 databases with 1TB each.
You can upgrade to Enterprise if required in the future.

buy the number of CALs for the number of user mailboxes (no CAL needed for resource/equipment mailbox like a conference room)

then if you have 350 user mailboxes, you need 350 standard CALs

Yes users holding a mailbox and accessing Exchange server requires Exchange CALs.
