How to get 2 external monitors connected to an HP laptop
We have a new HP laptop and we're trying to connect to external monitors to it using a device that plugs into the USB C type port. When we plug in the HDMI Adapter and plug both monitors in it doesn't work if we unplug one of the monitors it shows the external monitor and it shows the display on the laptop. How do we get all 3 displays to work laptop and 2 external monitors

Doesn't your Laptop already have a builtin HDMI port? if so, plug one of the displays into that, & the other into your Hub.

When plugged into the laptop HDMI and the other into the HDMI hub only the one plugged into the laptop works.
The previous screenshot is with both HDMI plugged into the Hub. When the HDMI is plugged into the laptop the "Multiple display" option becomes available..

Do you have the Laptop's Model Number? What GPU does it have? Possibly the GPU doesn't support more than 2 Displays, or the supported Max resolution is too low.

HP 15-dy1xxx. It is brand new.
First make sure your OS & Drivers are up-to-date (Windoze Updates). If that doesn't help, I would check on the HP service site for help. Maybe it just doesn't support more than one external Display.

When you right click the desktop and select display settings, how many displays does it show? It might be display 1 and 2 or is it display 1 and 2|3.
Further down on the Display Settings page there is a multiple displays dropdown that should be set to Extend these displays so you aren't mirroring.
Could you provide more information about the laptop and the USB-C dock you are using?
