Recommended Step by Step to Rename Azure Synapse Pool

New to Azure Synapse Workspace and pools.  DBA's are trying to find a process to restore database from prod into dev.  So for example, can set a restore point, can restore.  The issue, trying to determine how to rename the pool so that things that rely on the name don't have to be updated.

What is the recommended process?  We get errors trying to do the alter statement, have tried powershell with az commands and tried within the Synapse Analytics Workspace, and within SSMS using F2 and statements there.  Nothing seems to work.  Suspect our syntax is incorrect but trying to use based on what we've found via Googling.
