Also, which version of Windows are you looking to use? It should be added as a topic zone to your question.
Nuance's Dragon Naturally Speaking has been around a long while and is probably better than the free Windows voice.  The company's been around since the mid to late 90s. https://www.dragon-naturally-speaking.com/  Early Windows voice was mainly to control windows access, and not really meant for dictation.  Eventually, they supported dictation, but Dragon still works a little better.

Here's some comparison sites:

You can also compare with Google Voice,

I should also point out that Microsoft acquired Nuance quite recently, so you may be seeing Microsoft voice improve, but it's only been a year, so that hasn't happened just yet.

If Microsoft's solution doesn't work so well, is there anything out there that does work well and is free?  :)
Most things that are good aren't free, but there are two other possibilities that come to mind.

First is the dictation in Google Docs. Using the Chrome browser, create a new document in Google docs, then go to the tools menu and click on Voice Typing:

When you do that, it'll put a big microphone button on-screen and when you click it once, it'll prompt for permissions to access your microphone. Then click it once more to start have it listening, and you can talk and it'll start dictating.

The other possibility is to see if your mobile phone has dictation capabilities. It all depends on your type of phone and the brand installed. For example, my Google Pixel phone has a GBoard keyboard that has voice typing.
