i have 10 DC in my environment, but i am backing 2 DC daily and rest 8 are left out
in case of disaster situation, if all 10 are gone, can i restore remaining 8 dc from the back up i am doing on the 2 dc's
if yes, what method i should follow authoritative or non authoritative restore?

If there are 100 DC can I use the back up from that 2 DC
Or create ifm media and then reinstall AD through IFM

I suggest keeping the FSMO Roles on a DC at the main office and making sure that one is backed up.
A System State backup would be advisable though not necessary.
When restoring, we use Veeam, the backup product should be aware of the VM being restored, which in this case is a DC, and restore it appropriately so no need to muck about with BurFlags.

cant we use reinstall AD from ifm media option if that would be quicker?
Quicker than what? install from IFM media is used if you have no good bandwidth to another Full DC.

quicker than what i am being told by you do auth and non -auth restore.

You can do a cleanup and promote a new server as DC which will be easier.
