How to setup and configure Veeam backup with exchange granular support?

Veeam Backup unable to do granular file restoration on Windows Server 2019 VM that has ReFs partition installed.
 
Environment Setup
Currently we have Veeam software (v10) installed in one of my physical server, Dell EMC NX3240 for my daily backup. A Dell tape library TL1000 is also attached to the Dell NX3240 (via SAS cable) to backup. The current backup is daily to the disk storage on the NX3240 and another backup job to the physical tapes using the Dell tape library TL1000.
 
I am looking for the following services:
1)      Install a VM 2019 into one of my ESXI server, install Veeam and transfer the license into it. (We currently have a 4soc license + 1 x Veeam universal + an active maintenance with Veeam)
2)      Migrate my current Veeam jobs settings from the physical backup server to the new backup VM server. The daily backup will be going back to my Dell EMC NX3240 backup server and to my tape library for the physical tapes backup.
3)      Test and ensure that we are able to do restoration from our Backups for files/exchange objects etc.

How to setup and configure this new 2019VM as veeam backup server that support both storage backup and tape library? How to schedule exchange backup so as exchange granular restore is working?
