Weird text format in email subject to fool users to enter their credentials.

The other day a few of my users received a Phishing email regarding updates to their security on Microsoft. 


There were obvious keys that it was Phish, but the one thing that I am scratching my head about is how the subject line had some unknown characters, but looks normal.


how it looked on mobile apps as well as when you opened the email from within Outlook.

##Password Update Reminder ##johndoe@contso.com

How it looked in Outlook from the main window as well as how my ticketing system saw the email.

 ##Pas--sw--ord Up--date Re--min--de--r ##johndoe@contso.com


If you copied and pasted the subject into Notepad or Word you saw the weird formating.


My question is why did I see this without the weird formating from the mobile apps as well as when I opened the email?
