What are the pros and cons of daisy chaining your voip phone to your PC rather then coming off the wall port?

You usually use daisy-chaining that way only if you cannot supply enough ports for direct connection of all devices. There is no pro aside of that, only cons as mentioned.

Newer phones do have Gig ports for the pass through.

It depends on what you have to work with.
If you only have this as an option, the VLAN will still exist on a single switch
How data intensive are your applications on the computer.

Network separation to avoid data traffic on computers impacting voice quality.

Single switch vlan, and qos to prioritize voice data over all othother to preserve voice quality.

Does the phone have a DC for power, or is getting power  from the switch?
Hiw many phones, computers in the environment?
