My question is about the functioning of the Google Ads website, what is the path within it to be able to configure the extracts (age and gender) of a campaign that is already running...
If you don't have targeted segments in your current campaign, you may want to stop that campaign and start a new campaign.
You can also just use a campaign setting for people with higher frequency going to salons. In the new campaign, create an audiance. It doe snot look like you can target age and gender. But you can target "Frequehtly Visits Salons". I found that by searching "Salon" in the search area.

It looks if I create a "Display Network" campaign ... "The Google Display Network (GDN) is a group of millions of websites, apps, and videos where Google ads can appear."
So, this kind of campaign is specific to spread my site to be shown on another sites correlated to my business, isn't it?
Compared to sales campaigns, local sales, etc... if run on websites selling women's beauty products, women's clothing and shoes (which is actually consistent with the segmentations created) for example, it could make a lot of sense, that's about it. Even the logic of this type of campaign?

Isn't that part of setting up your audience? You can create multiple campaigns. One where the audience fits a specific profile like age 25 to 35 and another campaign targeting over age 50. Those are two segments.
