What if you also want to save the email body with the attachments? Will this manual method work? I tried but wasn't successful. Had to use a conversion utility Personal Mail Archiver to achieve extraction of attachments with the email body.

If you want to manually remove all attachments from your Outlook PST file, it can be a long and time-consuming task. You have to open every email and delete the attachment, thereby reducing the size of the PST file. However, this process can be tedious for large PST files and also carries the risk of accidentally deleting important data. You can use OSTtoPSTAPP Outlook PST Extractor software. This tool lets you safely extract all attachments without any hassle. This tool automatically identifies all attachments and helps you delete them in a single click, saving both your time and effort. Also, this process keeps your email data safe and reduces the size of the PST file, thereby improving the performance capability of Outlook.
